Kimchi Goes Mainstream in the U.S.?

Kimchi is a Korean traditional food that Koreans cannot do without. Though slow in reaching the mainstream American taste buds, it is becoming more widely available, as the Los Angeles Times story on mass-produced and distributed kimchi suggests [photo by the L.A. Times]. Kimchi even pops up in gourmet cooking competitions on TV as a "challenging" ingredient in fusion dishes. Moreover, kimchi is likely to gain wider acceptance due to its reputaion as a health food.
